CHARGRILLED OCTOPUS WITH TRUFFLE OIL DRESSING

A simple recipe for the Octopus - only using a handful of fresh ingredients.
Braise the Octopus first in some citrus flavours to tenderise the meat.
Then finish it on a hot grill to get those nice crispy edges and cover it in a simple truffle oil marinade.
INGREDIENTS
1 whole Octopus, cleaned
Water
Kaffir lime leaves
Bunch of oregano
2-3 lemons
2 Tbsp Olive oil
2 cloves garlic, minced
2 tsp lemon zest
2 Tbsp Lemon Juice
1/4 Cup Oregano, chopped
1/4 Cup Parsley, chopped
1/4 Cup Truffle Oil
Salt & Pepper
 
METHOD
Place Octopus into large pot, add kaffir lime leaves, oregano & 1 lemon halved.
Fill with enough water to cover the octopus and simmer on low for about 45-60mins. You should be able to easily pierce the octopus with a fork when it is tender. Remove from the pot and let cool. Massage a couple Tbsp olive oil & place on a hot grill for about 15 mins, flipping halfway, until nicely charred all over.
While doing this halve the lemons and throw them on the grill to get a nice char.
 
In a bowl mix together truffle oil, minced garlic, lemon zest, lemon juice, parsley, oregano, salt and pepper to taste.
 
To serve, pour dressing over octopus and squeeze over your charred lemons.
Dice the octopus into bite size pieces before serving.
